The ultimate easy dinner. Just throw everything into the slow cooker and let it do its thing.
If you would like to make this dish as more of a chili instead of soup, add another 1/2 pound of beef or ground turkey, use a 19-oz can of tomatoes instead of 28-oz can, and reduce vegetable broth to 1 cup.

Slow Cooker Chili Soup
Ingredients:
- 1 cup diced onion
- 1 small green pepper
- 1 cup sliced mushrooms
- 1 diced carrot
- 2 cups diced zucchini
- 1 – 7 oz can diced green chilies
- 1 – 15 oz can cannellini beans
- 1.5 pounds ground beef
- 2 tsp chili powder
- 1 tsp turmeric
- 1 tsp cumin
- 2 tsp oregano
- 1 tsp salt
- 1 tsp pepper
- 1 – 28 oz can diced tomatoes
- 2 cups vegetable broth
Optional toppings:
- Greek yogurt
- grated cheese
Directions:
- Place all ingredients in slow cooker and mix. Cook on low setting for 6-8 hours or on high for 4-6 hours. Stir occasionally to break up meat.
- When ready to serve, top soup with dollop of Greek yogurt and/or grated cheese.
Note: Ground beef does not need to be cooked before placing in slow cooker. Please be sure that beef is cooked before eating.
