Slow Cooker Chili Soup


The ultimate easy dinner.  Just throw everything into the slow cooker and let it do its thing.

If you would like to make this dish as more of a chili instead of soup, add another 1/2 pound of beef or ground turkey, use a 19-oz can of tomatoes instead of 28-oz can, and reduce vegetable broth to 1 cup.

Slow Cooker Chili Soup

Ingredients:

  • 1 cup diced onion
  • 1 small green pepper
  • 1 cup sliced mushrooms
  • 1 diced carrot
  • 2 cups diced zucchini
  • 1 – 7 oz can diced green chilies
  • 1 – 15 oz can cannellini beans
  • 1.5 pounds ground beef
  • 2 tsp chili powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 2 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 – 28 oz can diced tomatoes
  • 2 cups vegetable broth

Optional toppings:

  • Greek yogurt
  • grated cheese

 

Directions:

  1. Place all ingredients in slow cooker and mix.  Cook on low setting for 6-8  hours or on high for 4-6 hours.  Stir occasionally to break up meat.
  2. When ready to serve, top soup with dollop of Greek yogurt and/or grated cheese.

Note: Ground beef does not need to be cooked before placing in slow cooker.  Please be sure that beef is cooked before eating.
