Simple and quick to put together for those unexpected guests over the holiday season if your pantry is stocked with canned artichokes, red peppers, and olives.

3 artichoke hearts (canned in water or roasted), finely chopped
1 roasted red pepper (jarred or make your own), finely chopped
6 oil cured black olives, finely chopped
1 clove garlic, finely minced
1/2 tbsp lemon juice
1 tbsp olive oil
1/2 tbsp balsamic vinegar
1/2 tsp dried basil (or 1 tbsp fresh)
1. Add all ingredients together and mix. Can be enjoyed immediately or let sit for flavours to blend.
2. Serve on whole grain bread, crackers or serve along side grilled chicken, fish or omelettes.
