These no bake cheesecake-like desserts are easy to make and taste delicious. Be sure to plan ahead as you’ll need to soak the cashews overnight.
Cashew Bites

Cashew Bite
Ingredients and Directions:
Crust
- 1/4 cup dates
- 1/4 cup raw almonds
- Pinch salt
- 1/2 tsp cocoa powder
- 1/2 tbsp water (more if needed)
- Place crust ingredients into food processor.
- Mix until mixture sticks together. Divide into six portions.
- Line muffin tin with paper liners and press each portion into bottom of liner.
- Place in fridge until topping is ready.
Cashew topping
- 1/4 apple, peeled
- 3/4 cups raw cashews
- 1 1/2 tbsp coconut oil
- 2 tbsp maple syrup
- Pinch salt
- 1 tsp orange juice
- 1 tsp cocoa powder
- Cover raw cashews in water and soak overnight. Drain and dry.
- Add all ingredients to a food processor and blend until smooth.
- Divide cashew topping into prepared crusts, return to fridge and let set for 1 hour.
Note: Best eaten cold as the bites do soften if left out of the fridge
