Cashew Bites


These no bake cheesecake-like desserts are easy to make and taste delicious.  Be sure to plan ahead as you’ll need to soak the cashews overnight.

Cashew Bite

Ingredients and Directions:

Crust

  • 1/4 cup dates
  • 1/4 cup raw almonds
  • Pinch salt
  • 1/2 tsp cocoa powder
  • 1/2 tbsp water (more if needed)
  1. Place crust ingredients into food processor.
  2. Mix until mixture sticks together. Divide into six portions.
  3. Line muffin tin with paper liners and press each portion into bottom of liner.
  4. Place in fridge until topping is ready.

Cashew topping

  • 1/4 apple, peeled
  • 3/4 cups raw cashews
  • 1 1/2 tbsp coconut oil
  • 2 tbsp maple syrup
  • Pinch salt
  • 1 tsp orange juice
  • 1 tsp cocoa powder
  1. Cover raw cashews in water and soak overnight. Drain and dry.
  2. Add all ingredients to a food processor and blend until smooth.
  3. Divide cashew topping into prepared crusts, return to fridge and let set for 1 hour.

Note: Best eaten cold as the bites do soften if left out of the fridge
