Pineapple Cherry Jam

Want a more natural tasting jam for your breakfast?  This recipe has only 5 ingredients and we tested it with unrefined, organic coconut sugar.  It is made from the coconut plant and has a lower Glycemic Index than refined sugar.  We’d like to see long term research on coconut sugar before we’re convinced to use it more; however, cooking with a moderate amount is fine.

Note that using less sugar than typical jam recipes and avoiding any artificial ‘gelling’ ingredients make the texture of this jam less gelatinous.  Still, it’s very tasty!
